Just pile up the coals, light them, let them get white, and spread them out.  Should be more than hot enough to grill a good steak.  Just be patient.  If you can adjust the height of the coals, get them as close to the steak as possible for a good char.

You shouldn&#039;t have flames besides the occasional grease flare up.  The burnt grease adds flavor, but you don&#039;t want too much.</description>

Searing the meat on VERY high heat (both sides) and then cooking on lower or on indirect heat will seal in the juices.  You&#039;re cooking too high.  Remember that the hood of the gas grill makes your grill like an oven.  Heat is circulating all around the grill instead of just up and out.
You want to use a cut with a very high fat content.  I recommend ribeye or even switching to a Wagu or other US version of Kobe.
Baste, baste, baste!  Unsalted, melted butter with some garlic and onion powder mixed in, and frequently.  As soon as the heat has dried the outside of the steak, baste some more.  Also brush the steak with olive or other cooking oil before grilling.  
Don&#039;t salt the meat while grilling.  Season with powders or pepper but salt will dry out the meat.  Save the salt for when served.
Cook to no more than medium rare (rare is even better.)  Meat will cook, albeit slowly, for several minutes after you remove it from the grill.  Don&#039;t cut into the meat AT ALL (on or off the grill) until several minutes after grilling.  Meat has to set for a few to seal in the juices.

		<description>I let my steaks get room temperature. Then I rub them with Montreal steak seasoning. I get my grill going full blast on one side. The other side I leave off. I lay them room temp steaks on tha blazing hot grill covering them until they release from the grill usually 4 minutes. I flip em , cover em and wait 4 more mins. I then move my steaks to the cool side of the grill and shut the lid. Let the indirect heat work on them steaks for another 5 minutes (no peaking). I load em into a crock pot and keep em on warm till I eat. If I use a big old black 14 inch skillet I get it screaming hot( I have bacon fat in it,very important). I drop my (room temp montreal seasoning infused) steak on the pan and give it hell for 4 minutes and then flip it. 4 more minutes and then on to the crock pot as afore mentioned. I do one steak at a time. I deglaze by dumping shrooms (liquid and all) into that pan. Add a tad of butter and in a minute er 2 you have a very nice topping fer them steaks. Tater logs and artichoke salad with plenty cheap beer finishes out my fav meal. I have it every thursday night now for 30 years.</description>

		<description>The air went is like the control knob...... Open all the way allows more air which makes for a hotter fire, that would be high.  As you close it to half that would med.... and as you said closed would be low and snuff the fire out.</description>

		<description>The vents are used to control the heat.  If all vents are closed then the fire will lack air and go out.  If you leave all vents open the fire will burn hotter.  You learn as you go along.  With chicken I usually grill it first on both sides to brown and then put the top on with the top vent open and only one bottom vent open to finish cooking.</description>

I like to keep one vent - the farthest from the food or in your case the one on the bottom halfway open. The one on the top I keep a little less than half way open to keep more of the smoke in with the food and to temper the the cooking time.</description>

		<description>The lid vents are more for smoking.  You should also have a vent underneath... that draws air in.  The open vent at the top is what pulls the air (and smoke) thru the meat.  Obviously, the more oxygen you allow in, the faster and hotter your coals burn.  If you are having trouble w/ flare-ups, close the lid vent a bit to choke that out, if you are just griling hamburgers or chicken or something.</description>
